Fig, Cranberry, Lemon & Coconut Bliss Balls



There is nothing more simple and satisfying than whipping up a batch of bliss balls, knowing that you have something healthy and guilt free to reach for when the need arises…. and it does, let’s be honest. Menopause symptoms and hormonal imbalances aside (reason enough right there!), in mid-life you really just want to know that your sweet snacking is dairy-free, gluten-free, wheat-free, soy-free and sugar-free…. ensuring you are not subjecting your body to needless aging, risk of disease, and a sluggish metabolism (meaning weight gain).

Here’s a combination that I enjoy using figs (rather than the usual dates), with a hint of cranberry and lemon… and much loved coconut of course! The figs give the balls added crunch. Enjoy 🙂

1/2 cup shredded coconut
1/2 cup cacao
1/4 cup melted coconut oil
1 cup dried figs, chopped
1/2 cup of nuts (almonds or walnuts or pecans)
1 tsp cinnamon
1/4 cup dried cranberries
1 tsp lemon zest/rind
1 tsp lemon juice
a drizzle of maple syrup as required

Place all ingredients except the maple syrup into a blender and blitz until nuts are in small chunks and all is mixed together.
With the motor running, add a drizzle of maple syrup, as required, until a soft ball of dough is formed (just a small drizzle is required generally).
Form into balls and roll in desiccated coconut. Store in the refrigerator.

Note: for the nuts, I will use almonds and pecans, or almonds and walnuts, making it up to 1/2 a cup in total.
