Chocolate, Raspberry, Pistachio Slice
It’s Easter and there is chocolate temptation everywhere!! Help yourself to achieve moderation by making sure there is something chocolate-y in the freezer, so you can slice off a piece when the need arises.
This chocolate, raspberry, pistachio slice incorporates the goodness of cacao with the ‘good fat’ benefits of a little maple syrup, nut butter & coconut oil… plus the antioxidant power of raspberries (that are sensational just out of the freezer by the way). As for pistachios, they will provide you with essential nutrients such as calcium, magnesium, zinc, potassium, folate and vitamins A, E and K. So get stuck in!
Add the following to a blender:
1/2 cup coconut oil
1/2 cup dates (stone removed)
1/3 cup nut butter
3 Tblsp maple syrup
pinch of salt
Stir in 1/2 c cacao powder, then blend again.
Stir in a handful of pistachios.
Line a slice tin with baking paper.
Spread the mixture reasonably thinly.
Sprinkle on roughly chopped raspberries and more pistachios, and press down so they stick to the mixture.
Freeze for 30 minutes.
Slice up into long, thin slices. Store in the freezer.
Take out a minute before eating…. while your tea is brewing 🙂
